Dehydrated beans & ramen

There is almost nothing better than making a self sufficient meal for backpacking!

I have made this meal with beef and chicken, however can be completely meatless as well.

Ingredients://

1 can organic white beans

2 handfuls kale

1 chicken breast

1 can tomatoes

1/2 cup scallions sliced

1 package GF Ramen - this brand is incredible, great ingredients and favor for this meal!

Cooking Instructions

  1. I used an instant pot to cook chicken breast, place chicken in bottom of instant pot- season well, add 1 cup of chicken stock. High pressure for 15 minutes. Let release- and shred chicken well.

  2. Meanwhile, rinse and drain the beans

  3. Slice kale and scallions

  4. In your skillet add chicken, beans and tomatoes- add kale and cook down

  5. Add scallions

  6. Sea salt and pepper to taste

Dehydrating Instructions

  1. Prep food dehydrator and add parchment paper to each tray.

  2. Turn on food dehydrator 160 degrees F and dehydrate for 8-10 hours or until crispy.

  3. Rotate trays once every hour while dehydrating.

  4. Remove each tray from dehydrator and let cool.

  5. Once cooled, break up and package each tray into a storage container, Ziploc bag or vacuum sealed bag- (I store in the freezer)

I scoop out about 1- 1.5 cups of dried mixture for one meal in the backcountry.

Rehydrating in the Backcountry

Using backcountry stove:

  1. In stove boil water (per directions), simmer for 1 minute and turn off, cover with lid and let steep.

  2. Meanwhile, rehydrate beans/veggie/meat mixture in a cook in bag. Cover with enough boiling water to cover the mixture.

  3. Let covered in cozy for 10 minutest

  4. Give a stir.

  5. I then placed everything in the pot and simmered for a minute or so and added the seasoning packet and made sure everything rehydrated well.
