Venison Meatballs (no eggs)

Meatballs are literally a house staple. They came together quickly, easily, freeze well and reheat better.

I hope you find these as delicious as we do. Delicious served with greens and roasted white sweet potatoes.

Ingredients you need://

1 lb of lean ground meat- I use ground elk, bison would also be great.

.5lb of mild italian sausage, pork or chicken

1 tsp of salt

1 tsp of herb seasoning (no salt!) I often use Tj’s 21 Salute

1/4 tsp red pepper flakes * optional

1/2 cup chopped greens, I use spinach or argula

2 Tbsp chopped green onion

2 Tbsp cassava flour

Sauce- Primal Kitchen Honey Mustard Dressing (TRUST ME)

In a bowl- combine all the ingredients (not the dressing). Mix well.

In your skillet heat oil- I use duck fat, avocade oil would also work.

Shape your meat balls, into approx a tbsp in size.

Heat- oven to 350 degrees.

Place meatballs into the heated pan, (don’t over crowd them, you will need to do in batches! Rotate over approx 6 min each side. Once each side is brown place into oven and continue adding until all are cooked.

Once all meatballs are cooked, add into skillet and drizzle with dressing. I use about 1/4 cup of cup and heat on low.
