Sugar Snap Pea & Radish Salad

With the weather calling for 90’s-100 degrees all week, I am craving simple, easy and veggie rich foods!

Late spring early summer, sugar snap peas are abundant in season. Their sweet and crunchy flavor is one of my absolute favorites!
Legumes often get a bad rap, from a Nutritional stand point I understand both sides. Yet, today I'm only focusing on positive benefits of these nutritional babies! As increasing your legume intake is not necessarily for everyone, it can provide many essential nutrients and benefits to your over all health! .

Sugar snap pea salad deets://
Handful of fresh sugar snap peas (2 cups) sliced.
2-3 Radishes thinly sliced
1 apricot quartered and sliced
1 tablespoon walnut oil
1 tablespoon fresh dill
Pinch of sea salt

In a bowl combine your peas and radishes, drizzle with walnut oil. Top with apricot and dill and sprinkle with a pinch of sea salt. Enjoy!

Fun fact! Radishes increase the flow of bile, which will support your liver and gallbladder function aiding in proper digestion and assimilating the omega-3 fats from the walnut oil. Plus the earthy spicy flavor with the apricot is pretty damn divine. .
