Quinoa Patties with Greens

This has been an “on repeat” recipe for years. These are quick and easy to make, the hold up extremely well to toss in your freezer or pack in your cooler for a long weekend out camping.

Deets://

1 cup uncooked quinoa

  • 2 cups water

  • 4 eggs, whisked

  • 1/3 cup Nutritional Yeast

  • 1/4 Cup Chopped Green Onions/Sweet Onion

  • 2 Tsp of finely chopped red pepper (for color)

  • 1/2 tsp mineral sea salt

  • 1 cup sautéed mustard greens or kale- if I don’t have one of those two I use chopped up fresh Arugula.

  • 1 cup almond flour

  • 1/4 Cup Chopped Walnuts

  • 1 teaspoon coconut oil

Process://

INSTRUCTIONS

  • Place the quinoa in a medium sauce pan with 2 cups of water and a pinch of sea salt. Bring the water to a boil and reduce to a simmer.

  • Cook until quinoa is tender and has absorbed the liquid, about 20 minutes. Let it cool.

  • In a large bowl, combine the cooked quinoa, eggs, nutritional yeast, green onion or onion, salt, 1 cup of greens of choice and almond flour. Let everything sit for a few minutes to absorb the liquid. Scoop out your patties with a measuring cup- 1/4, gently form.

  • Set your oven to “warm”.

  • Heat the oil in a large cast iron skillet over medium-low heat. In 2 or 3 batches, cook the patties covered for 8-10 minutes on each side, or until browned and golden- place cooked patties in oven to keep warm while you finish the remaining.

  • On top of a salad.

  • Served with running eggs on top- for dinner or brekkie.

  • All by themselves.
