Dehydrated Spiced Nut Clusters

One of my favorite things about dehydrating your own food is reducing food waste! Taking “yesterday’s forgotten foods and making nourishing foods for tomorrow”. It has been a trick of my trade for years being able to dive into creativity, while reducing food waste. It’s a win win.

I was cleaning out the cabinets found a small amount of Hot Eric’s Honey in the cabinet, so let’s back up a minutue, what is Hot Eric Honey? “Hot Eric Honey is an enticing electuary—raw honey mixed with spices—enjoyed daily to support a healthy immune system, experience superfood powers”. It’s a delicious go to for a delicious cup of tea, apple spiced muffins and well nut clusters as well ( I actually love cooking with it the most!). I used the Original, although this would be aboustely delicious with the cacoa as well as the chai! The Original contains; Honey, Turmeric, Ginger, Coconut Oil, Cinnamon, Black pepper, Clove making it really a perfect companion for the trail.

1/2 Cup of Raw Sunflower Seeds

1/2 Cup Raw Pumpkin Seeds

1/2 Cup Almonds (I had sliced on hand)

1/4 Cup of warmed Original Hot Eric

I placed the nut mixture in a bowl, drizzled with Hot Eric and stirred well making sure everything was nicely coated.

I evenally spread out the mixutre on my fruit leather trays for my dehydrator-set the temp to 105 degrees and walked off for a few hours (Approx 4 hours). At that time, I came home and flipped over the clusters as the bottom still needed alittle air bath. Turned back on for 105 degrees and left for another 2 hours.

Perfection! Wonderful little trail bites for a weekend backpacking trip! Or you know a regular snack on a Tuesday!
