Cider Braised Pork Chops

Pork chops are often tricky- as you want to cook them just enough, yet not too much. My solution- braise them.

Deets://

4 Pasture Raised Pork Chops (if you can get thick cut - with bone in)

1 Tsp Fat (I use duck fat)

1 /2 tsp sea salt

1/2 tsp no salt seasoning

3/4 cup apple cider juice (make sure to get no added sugar!) I like RW Knudsen Cider & Spice

1/2 cup bone broth/stock

1 Tbsp dijon mustard

Handful of fresh herbs - chopped. I used sage & thyme

Process://

Preheat oven to 350 degrees. Season pork chops.

Meanwhile in an cast iron skillet - heat fat at medium/high heat. Brown each side of the pork chops, 3-4 minutes each side. Remove pork chops- and set aside.

Pour bone broth into skillet and scrape off any bits, pour in apple cider, and stir in the dijon mustard. And gently stir in the herbs, let simmer for 2-3 minutes. And place pork chops back into the stock/cider mixture and place cast iron skillet into the oven.

Braise in the oven for approx 30 minutes. Check to assure the pork chops are to at least 145 degrees.

I served with wilted greens and roasted sweet potatoes.
