Apricot Chia Jam

When your friend offers to give you a bunch of fresh apricots from her garden you must gladly accept.

Note: fresh produce of any kind a special love language!!

I am still just as obsessed with homemade chia jam as I was a few weeks ago when I started busting it out!!

These guys are incredibly flavorful and tart which made for a delicious treat of a jam!

Deets://

2 Cups Fresh Apricots - pits removed and softly chopped

2-3 Tablespoons Chia Seeds

1 Tablespoon fresh lemon juice

Honey to taste - I used about 1 tablespoon I believe

Process://

Place the apricots in a saucepan- heat on med-low until soft and failing apart (approx 10 minutes)

I used an immersion blender to puree the skins and all. Add, lemon juice and honey stir. Reduce heat to low and add in chia seeds. I used 3 tablespoons as the texture was slightly thin. Heat on low for approx 5 minutes.

Cool and store in an airtight container in fridge for up to one week.
